Here at The Thirsty Lawyer, we are looking for an F&B Director, to be responsible for managing all F&B operations and for delivering an excellent guest experience. The successful candidate will be able to forecast, plan and manage all F&B orders, staff and finance. The goal is to maximise sales and revenue through customer satisfaction and employee engagement.

Key Tasks & Responsibilities
  • Liaises with kitchen/bar/restaurant teams and reports to Restaurant Owner
  • Handles escalated customer complaints / online brand image
  • Establishes KPIs and manage business progress
  • Controls costs in purchasing by negotiating supplier contracts, maintaining effective profit and loss controls and monitoring labour costs following demand patterns & budget
  • Maximises food and beverage sales by identifying and targeting sales opportunities through marketing including promotions and special events and by training staff on up-selling
  • Creates policies and ensures staff/guests adherence
  • Protects staff & guests by training staff in and adhering to all safety, sanitation, food preparation, food storage and alcohol beverage control policies, including confirming legal drinking age and discontinuing service to intoxicated guests

S/he will work in a cross-functional capacity to research, plan, execute and measure various event initiatives. In addition, the Corporate Events Coordinator will also be responsible for establishing and maintaining successful relations between clients and various vendors, such as catering and entertainment. S/he will have access to a fully-equipped office and a Marketing support team. The successful candidate should ideally have at least 5 years’ experience in event management.

Key Tasks & Responsibilities
  • Creating a year-round events programme for The Thirsty outlets located in Malta.
  • BOOKINGS MANAGEMENT (corporate/large groups): Overall responsibility for the management of corporate bookings (from conception to completion) including large bookings such as conferences, conventions and trade shows. This includes responding to inquiries concerning services provided and costs for room and equipment hire, catering and related services, as well as meeting with clients to discuss their needs and outlining package options to meet these needs and negotiating the type and costs of services to be provided within the budget
  • Coordination with F&B Director in relation to corporate events/large groups to ensure client needs are met during the events
  • BRAND EXPOSURE: Developing the event “brand” (e.g. logo/theme, promotional items, collateral, internal/external event related communications, etc.) and event marketing campaign development, submitting and tracking invoices for events and sponsorships, defining company brand through events and internal/external communications, and establishing partnerships while promoting the brand with local hotels, established businesses, and managing corporate events
  • PR: Creating marketing campaigns and updating social media sites (such as Facebook, Instagram and Twitter), developing relationships with media representatives to create opportunities for keeping the company and its services at the fore of public attention, and promoting services to potential customers. Here at The Thirsty Lawyer, we are looking for a Commis Chef, to be responsible for all tasks concerning food preparation and organisation in the kitchen and to be responsible for delivering an excellent guest gourmet experience. The goal is to maximise sales and revenue through customer satisfaction and employee engagement.

Key Tasks & Responsibilities
  • Prepares ingredients for food dishes to be prepared by the kitchen team
  • Performs basic preparation and organisation tasks in the kitchen
  • Complies with safety and sanitation regulations and food preparation and storage requirements
  • Assists with deliveries of stock
  • Maintains guest satisfaction by acquiring feedback from guests and co-workers in order to ensure satisfaction and/or implement service improvement ideas and developing new concepts to ensure customer satisfaction and repeat business
